Not a bad idea to hide in a Mustang to stop street racing but will we see more cops driving import cars like this Nissan 350Z?

Back in the early 90s the KY state police used mustangs to catch speeders on the
interstates Or was that the 80s.

 The Canadian RCMP also had Mustangs but I don't think there was many of them.

They use them for Texas  DPS highway patrol.

I truly hate the Texas highway patrol.  Known as Texas troopers, they are nothing more than tax collectors, and they collect in small communities where the speed limit is unjustifiable for the conditions.  They are bottom feeders.  Here is one I enjoy seeing.  A$$ hole trooper appears to be writing a ticket to the cop who wrecked the Mustang.  Dumb a$$.

cops in NC seem to like the Dodge Chargers

That's because the Chargers have one bad assed Hemi head engine.  The problem with them is their weight.  That little 4.6 Mustang Cobra will spank their butts every time.
