AC is working! Went ahead and added a 2800 CFM Electric Fan this morning. Temperature still holds nice and cool. Need to tidy up a few details, but generally happy with everything.

Air is plenty cold, cools just fine. I need to add a AC solenoid bracket an solenoid to my carb to kick up the idle when it is on though as my engine idle drops enough to make it stall if I am not careful when the AC is on. About $90.00 if I get it all from Holley, or maybe $10.00 if I can find one at Pull a Part.
