I will assume you mean a 302 motor, and not a 306. The head bolts are larger diameter on the 351 W heads vs your 289/302 block - in addition to the other options, you can also by a head bolt kit through summit (1/2 inch diameter non-threaded part, 7/16" diameter threaded part).
351W heads will outflow your stock(?) 289/302 heads but your 289 heads have smaller conbustion chambers for increased compression. Basically, with a direct swap you probably will not notice a significant power gain between the two.
You can mill the 351 W (0.01 inches I believe) to decrease the combustion chamber volume to about 59cc's - this should put you at about 10:1 compresison with stock pistons (similar to where you are with the 289 heads). Also, you can do some porting to enahnce performance.
You are better off just buying a good set of aftermarket heads rather than pay someone to port, shave your 351 W (not to mention screw in studs, guides, etc). If you are on a budget and interested in home porting I would just home port your 289 heads. You can fairly easily make them flow like the windsors plus you benfit from the smaller combustion chambers. Or if you can find a set of ported, milled 351 W for a fair price that is another budget way to go.
Or just swap what you have and see for yourself. Thats part of the fun.
Regarding Hp gain, I would expect about 30-40 with a moderate port job on your 289 heads.
