I have a 2000 gt with CAI, Headers, off road x pipe and catback, and I am looking to increase my horsepower, how ever I dont know where to go from here

Have you gotten it tuned?
If not your aftermarket products may not be giving you their all. I would recommend taking the car to a mustang performance place and seeing if they can program it for you. It might save you a good $200
